Zoom's own words (zoom.com/en/trust/terms):
Zoom does not use any of your audio, video, chat, screen sharing, attachments or other communications-like Customer Content (such as poll results, whiteboard and reactions) to train Zoom or third-party artificial intelligence models.
Terms of Service Update Notes: Updates to Section 10 to clarify Zoom’s data usage practices, narrow the scope of Zoom’s licenses and clarify that Zoom does not use audio, video or chat Customer Content to train its artificial intelligence models.

No security certifications were mentioned on the pages we could read. Zoom's trust page may load them with JavaScript.
A certification on a website is a claim. For anything sensitive, ask Zoom for the SOC 2 report or ISO certificate.
Our reader didn't find a subprocessor list on Zoom's public pages. It may be published somewhere we couldn't reach, such as a trust portal that needs JavaScript or a login. Ask Zoom for it if you need it.
